I love French Onion soup, you know the classic rich broth covered with gooey cheese. Seems so decadent, but it can actually be made quite healthy. The issue I always have though is all the work for a soup that isn’t quite a meal. Enter the French Onion Stew. All the flavor with added nutrients and protein for a complete meal.
To get even more flavor use a homemade or store bought vegetable broth instead of water and serve in crocks with melted cheese over top. Use Swiss, cheddar or mozzarella cheese.
