Yerushalmi mix or Me’orav is a grilled meat considered a specialty of Jerusalem, but is popular all over the country. It consists of all different parts of the chicken including lots of organs you can’t even find in the US and even if you could find, you might not feel comfortable cooking.
My husband is in love with this dish, so I developed a vegan version using seitan so my vegetarian kids could enjoy it, but it works equally well with pieces of chicken breast or thighs and the added chickpeas and mushrooms help make it a complete meal, but also provide a nice contrast of textures. Enjoy in a pita or over rice.
It all starts with the spice blend. Make a batch and store for other uses, it is great simply on chicken or fish or beef.
