If you can find 100% buckwheat soba noodles they are gluten-free and incredibly healthy, but they are a bit gummy. Be careful not to overcook and rinse well with cold water to loosen them before adding to the pot.
If you don’t like soba or can’t find them any noodle will work from soaked rice noodles to cooked whole wheat spaghetti.
This is the ultimate meal prep dish. Mix the sauce ahead, chop and prep the veggies, coat the chicken. Then when ready to cook it takes less than 10 minutes.
