- 1 large or 2 medium zucchini
- 1 tablespoon extra virgin olive oil
- Kosher salt
- Freshly cracked black pepper
- Slice zucchini very thin with food processor, mandolin or just with a knife. Lay out on a large cookie sheet and mix with oil and salt and pepper.
- Bake for 20-30 minutes turning after 15 and keeping a close eye after 20.
